    Mango Yogurt Parfait with Homemade Granola

    Before this year’s Mango season comes to an end, I want to share as many mango recipes as possible. The latest favorite at home is this super simple, extremely delicious and healthy Mango Yogurt Parfait with Homemade Granola. I first heard the term Parfait in Masterchef Australia years ago. It remember it to be such a cool, intriguing thing I have never tasted before. At times, parfait is served frozen and I have also seen it being served fresh in single serve bowls. Last year, when I was in the US for my work trip, I got a chance to finally try berry parfait with crispy granola on top. It was too sweet for my liking, especially having grown up eating warm, spicy food for breakfast. As we are watching the latest Masterchef AU season, I remembered parfait again and decided to make it with juiciest mangoes.

    So I made Mango Yogurt Parfait with Homemade Granola and believe it or not, it is very very simple. Sometimes, the names or the ingredients or the recipes seem difficult only because there is certain level of unfamiliarity and we can’t relate to it instantly. Parfait was such a thing for me – I always thought it is unnecessarily complex, without ever thinking of the recipes or the origin. Sorbet was a revelation too and coincidence much, I tried sorbet with fresh mangoes first. To make it easier, let me try and explain what a parfait is. It is a layered breakfast (dessert for me) with fruit and/or sweetened yogurt with crunchy granola added on top. Once I decoded the individual elements – it was very easy to relate it to my style of cooking. Aamras, Lassi and some crunchy oats + dry fruits & nuts on top. That’s the layman’s version of Mango Parfait for you 😀

    I can’t talk about Mango Yogurt Parfait without talking about the homemade granola. It has been on my to-do list since forever and thanks to this parfait, I got to try it as well. Granola is sweetened oats, dry fruits and nuts cooking to a crunch. It can be used for as topping on smoothie bowls and cooked porridges or had as a delicious snack as it is. I made mine customized to our tastes, with as little sweetener to keep it mild and coconut oil, to get that crunch and flavor. It took literally 15 mins to make this healthy homemade granola in my oven start to end and I know for sure that it is going to be a regular fixture in our kitchen. And it definitely did oomph my Mango Yogurt Parfait.

    Equipment

    • Oven (OTG)
    • Blender
    • Mason Jars/Serving Bowls

    MEASUREMENT

    1 cup = 250ml, 1 tablespoon = 15ml, 1 teaspoon = 5ml

    Ingredients
      

    To make Homemade Granola –

    • ½ cup Cooking Oats/Rolled Oats
    • 3 tablespoon Slivered Almonds
    • 2 tablespoon Sesame Seeds
    • 1 tablespoon Pumpkin Seeds
    • 1 tablespoon Dried Blueberries
    • 2 tablespoon Dried Cranberries
    • 1 tablespoon Honey
    • ½ tablespoon Coconut Oil
    • ¼ teaspoon Vanilla Essence
    • Pinch of Salt

    To make Mango Yogurt Parfait

    • 2 Large Ripe Mangoes I used Alphonso
    • ½ cup Thick Homemade Curd/Yogurt Use store bought Greek Yogurt
    • 2 teaspoon Sugar Adjust as needed
    • ¼ teaspoon Vanilla Essence
    Prevent your screen from going dark

    Instructions
     

    To make Homemade Granola –

    • Preheat oven at 180°C for 10 mins. In a mixing bowl add oats, slivered almonds, sesame seeds, pumpkin seeds, dried blueberries, dried cranberries. Mix well.
    • Add honey, coconut oil, vanilla essence and a pinch of salt.
    • Mix everything until honey and coconut oil are coated well.
    • Spread the granola mix on a tray lined with parchment paper. Place in preheated oven for 10-15 mins at 180°C.
    • After 10 mins, take off the tray and spread the mixture. Place into the oven for another 5-8 mins until the oats are crispy.
    • Let the granola mixture cool down before storing in an airtight container.

    To make Mango Yogurt Parfait –

    • Set the serving bowls/jars in fridge while rest of the preparation is happening. Scoop out the mango pulp and blend until smooth. My mangoes were really sweet, so I didn’t have to add any extra sugar. Add 1-2 teaspoon of extra sugar if needed. No other flavoring ingredients with mangoes.
    • Add vanilla essence and 1-2 teaspoon of sugar to the homemade curd/yogurt.
    • Beat the yogurt using a whisk until it is creamy and smooth.
    • To serve the mango yogurt parfait, take out the serving bowls/jars from the fridge. Add a layer of mango puree as first layer.
    • Next add a layer of sweetened yogurt. Repeat the mango puree and yogurt layers until the bowl/jar is ¾th full. Set in the fridge until it is ready to serve. Stays good for a day.
    • Top off with homemade granola. Serve immediately.

    Detailed step-wise picture recipe of making Mango Yogurt Parfait with Homemade Granola –

    To make Homemade Granola –

    Preheat oven at 180°C for 10 mins. In a mixing bowl add oats, slivered almonds, sesame seeds, pumpkin seeds, dried blueberries, dried cranberries. Mix well.

    Add honey, coconut oil, vanilla essence and a pinch of salt.

    Note –
    • Adjust the amount of sugar in yogurt and mango puree as per preference. I kept mine minimal as the mangoes were sweet.
    • For homemade granola, apart from oats you can use any dry fruits or nuts as per preference and availability. You can also add coconut chips or desiccated coconut.
    • The number of layers in the parfait can be customized as per your liking.
    • Instead of granola, you can also top off with fresh fruits or just dry nuts.
    • I made this in mason jars as it is easier to store them in fridge.
