The next and last in the Gokulashtami series after Uppu Seedai and Maida Thattai is this really delicious and simple Maladu recipe. Maa Ladoo or Maladu is usually made with roasted gram and sugar. But instead of using sugar, I made Maladu with Jaggery and it turned out so good. Now why did I replace sugar with jaggery? You guessed it right – I have a story. Growing up, Thokkudu Laddu used to be my most favorite sweet from Andhra. Being far away from our hometown, we got to enjoy traditional sweets and savories during summer vacations or when our closed ones visited us. During one such time, I happened to taste this delicacy called Thokkudu Laddu – gram flour based sev (deep fried in ghee) is hand-pounded in a mortar-pestle with jaggery until it is smooth and silky, made into laddus. It is the most delightful underrated Andhra sweet of all times. My paternal grandmother made the best of these Thokkudu Laddus *recipe for some other time*
I also have fond memories of my parents making Thokkudu Laddu for my birthday once and it is not simple or straight forward – a lot of effort goes in. When I thought of making Maladu, I guessed it should taste closer to Thokkudu Laddu if used Jaggery instead of sugar. And I was right. From the beautiful golden yellow color to the rich taste of jaggery and the flavor of homemade ghee – I was transported back to the good old days. And it got done so easily – no deep frying, no hand-pounding in mortar pestle and not too high in calories. So Maladu with Jaggery was a huge hit at home!
Roasted Gram/Pottukadai/Veyinchina Senaga Pappu is a rich source of protein and is often recommended to keep hunger pangs at bay. It is a healthy alternative to store-bought packaged snacks and while being healthy, it also keeps us full. Jaggery, a healthier alternative to sugar is a rich source of iron. I love the earthy flavor of the jaggery compared to refined sugar and when combined with roasted gram flour, it makes a magical combination. Have you ever munched on small pieces of bellam with veyinchina senaga pappu (jaggery with roasted gram)? It’s so good! In this recipe, I roasted cashews in a small amount of homemade ghee and that added a great flavor to the Maa Ladoo. Anyone can make this simple sweet and it gets done quickly too!

Maladu with Jaggery | Maa Ladoo | Easy Maladu
Equipment
- Blender
- Small Fry Pan
MEASUREMENT
1 cup = 250ml, 1 tablespoon = 15ml, 1 teaspoon = 5ml
Ingredients
- 1 cup Roasted Gram/Pottu Kadalai/Veyinchina Senaga Pappu
- ¾ cup Powdered Jaggery
- 2 Green Cardamoms
- 8-10 Cashews Broken into small pieces
- 3 tablespoon Ghee
Instructions
- In a blender add roasted gram and grind into a fine powder. Remove onto a mixing bowl.
- In the same blender add powdered jaggery and cardamoms. Grind into a smooth powder. Remove onto the mixing bowl.
- Mix both roughly.
- In a small fry pan, heat ghee. Add broken cashews and roast until golden.
- Pour it over the mixture in the bowl.
- When the mixture is hot, use a spoon to combine everything together. It will look crumbly.
- As the mixture becomes warm enough to handle, mix it well and take a small portion of the mixture, roll it into a tight laddu.
- Repeat this with rest of the mixture and make laddus of desired size when the mixture is warm. If it is too dry, add a few drops of ghee to combine.
- Store in an airtight container for upto a week.

Note –

- Adjust the amount of jaggery depending on the sweetness preferred.
- You can also add slivered almonds to the ghee.
- Roll the laddus tightly or else they will fall apart – it easier to do this when the mixture is warm.
