    Yay! It’s Friday finally 😀 In spite of this week being a short one, I felt like it has been going on forever. Friday is my most favorite day of the week and I can say that I desperately wait for it week after week. Imagine Friday evening, when you know you have the whole weekend stretched in front of you with absolutely nothing to worry about! And that’s what makes Friday awesome 🙂

    Don’t you guys agree that Friday deserves a little celebration? I might have the perfect recipe for you. A super super super simple chocolate mug cake that can be put together in 5 mins. Yes! All it takes is just FIVE minutes. This recipe is so good, literally so good that I have made it a number of times ever since I gave it a first try. If you love chocolate, this recipe is for you. If you love cake, this recipe is for you. If you love simple easy desserts, this recipe is for you. If you love cake but have been watching your weight and calorie intake, this recipe is for you too! Considerably low fat, low calorie, single serving of chocolate cake in a mug is a blessing in chocolate disguise – I kid not!

    In the past I have tried a lot of mug cake recipes. The ones that had the burnt eggy smell to the eggless ones that really didn’t feel any chocolaty. After several unsuccessful attempts, I decided that I am better off making cakes in my OTG – forget microwave. But.. but, few days back my sister claimed that a recipe worked wonderfully well for her and on top, it was an eggless recipe. So I took a look at this recipe link my sister shared and with the proof that it had worked for her, I set out to try it out immediately. Boy oh boy, am I glad or what I tried this recipe?! This is probably the most moist, tastiest, easiest, chocolaty cake (forget mug cake) that I had ever had. I literally licked the mug clean. As I mentioned, I have been making this everytime we have a chocolate or dessert craving and it works perfectly. A quick dessert fix in less than 5 mins. I have made very few modifications to the base recipe and it works like a charm. Try it for yourself to trust me.. You wont regret it I tell you 🙂

    MEASUREMENT

    1 cup = 250ml, 1 tablespoon = 15ml, 1 teaspoon = 5ml

    Ingredients
      

    • ¼ cup All Purpose Flour
    • 2 tablespoon Cocoa Powder
    • ¼ cup Milk + 1 tablespoon if needed
    • 2 tablespoon Sugar
    • 2 tablespoon Oil
    • ¼ teaspoon Vanilla Extract or Essence
    • ¼ teaspoon Baking Powder
    • ¼ teaspoon Instant Coffee Powder
    • A Small Pinch of Salt
    Prevent your screen from going dark

    Instructions
     

    • In a bowl, add all-purpose flour, sugar, salt, cocoa powder, baking powder, instant coffee powder and mix well. Add the wet ingredients – oil, milk, vanilla essence. Mix together so that there are no lumps. The mixture has to be thick but not too thick to not even fall off the spoon. If it is very thick, add 1 tablespoon of extra milk.
    • Pour the batter into a microwavable mug/cup (ceramic and not plastic). Make sure the batter is either half-filled or filled upto ¾th. Put it inside microwave and on high power, microwave for 60 secs. By now, the cake should have raised well and the center should not look wet. If seems little wet, set it for another 15 secs.
    • Remove from oven and serve hot.

    Notes

    • There is no sifting as such required with the dry ingredients but make sure there are no lumps when mixing the ingredients.
    • If the mixture is too thick, add 1 tablespoon of extra milk.
    • Make sure milk is at room temperature.
    • Each microwave is different and so are the settings. So, keep a close eye on the cake while microwaving. Only if it seems too wet in the center, keep it for extra 15-20 secs. It just takes a few seconds for the cake to burn in microwave. Or it could be too dry.
    • Add choco chips on top just before microwaving for an addition goey chocolaty cake.
    • Instant coffee powder is optional, especially if serving to kids.
    • Don’t fill the cup/mug more than ¾th as the batter could overflow while microwaving.
    • I doubled up these quantities to make two cups of chocolate cake.

      yum.. I love these mug cakes.. Vaandu loves vanilla flavor so I always for it and posted the same too. Need to try this chocolate one. Great share.

      I have tried a lot of instant chocolate cakes in a mug. Most have been with egg. A lot of them are decent, but I always thought something was off.. They aren't spectacular. Sometimes too dry, sometimes hard, even if I follow measurements perfectly.

      So I am definitely interested in trying this out. I am such a sucker for moist cakes. I hope mine turns out as amazing as yours looks.

        Okay, I had to come back here to tell you I tried this out and the results were phenomenal! I made one mistake. I added only 1 tbsp of sugar instead of 2. That too a less sweet variant of brown sugar. As a result, we could taste almost no sweetness in the cake. But despite the lack of sweetness, we loved the texture and moistness. It was a light and fluffy, just what the way we like it and so much better than the egg versions!

Yes, I agree - I have tried reducing both oil and the sugar in half (in 2 different experiments). Less oil still worked fine but with less sugar, it almost was too bland. Hope you get to try this out once more 🙂

      I used to make mug cakes a lot when I was in college, and I totally know what you mean about the eggs. I stopped making them because I was never happy with the texture the egg left my mug cake. Thanks for sharing this, it looks perfect! Happy FF!

      I have always been fascinated by these 2-minute mug cakes, but have never made them because they always see to require a microwave oven. I have an OTG, not a microwave. Can I still make these cakes?

      Do you use an OTG as well as a microwave? If so, I'd love to get some advice from you.

        Thanks TGND 🙂 Yes, this cake is specifically designed for microwave oven. The original post author infact mentioned that this might not work for an OTG 🙁 I have not tried this same recipe in an OTG.

        I do have both OTG as well as microwave. Except for these 2 min mug cakes, I dont use my microwave for baking. I dont have the convection mode, so I prefer my OTG for baking. But I love my microwave oven for all the quick toasting, roasting and cooking (and of course the reheating).

      I tried it. Awesome. Soft and yummy. Just that I skipped the coffee and cocoa powder. Cos my daughter is allergic to coco. But nevertheless, it was awesome. Thank you very much.

      Hello, which oil did you used ? Also is there any substitute of oil ? Till now I have tried 4-5 different recepies of mug cake but nothing worked out for me .

        Hello, I used regular cooking sunflower oil. Also, this recipe works best with oil - I have never tried it with butter.

      Hiii, i wanted a surprise fa my husband after his tiring shuttle game, I just tried ds cake , was so soft n amazing, I didn't hv oil so I substituted with butter, d outcome was too gud, I felt t to b less sweet so I melted chocolate n dressed up d cake n garnished t , its awesome. I wish I could share d pic here , but unfortunately no such options. Im waiting for his arrival n comments ?. This first tym I've tried eggless cake n wooooo d victory s mine. Thanks chcooks ☺️

      Hi,
      Can you tell me what is 1/4 cup exactly? Also should I bake this cake in microwave mode or convention mode.. always confused with oven options..tired many cakes but never get a good one.

        1/4 cup is about 60gms. You have to use microwave mode for this.
