First Happy Deepavali to everyone celebrating the festival today! This last recipe of my Diwali Special recipe series is a sweet, Apple Kheer. Payasam or Kheer is an integral part of any festivity. In fact I can’t imagine any festival without having a cup full of thick, rich and delicious Payasam. Usually, my mom or MIL would prepare the Semiya Payasam for Deepavali. This time I thought why not try something not too traditional and ended up making this Kheer with apples!
Ok, time for a confession. I am not too fond of apples. I do have them from time to time, when the husband nudges me every morning with the sight of apples on the dining table. And then again when he calls me in the evening. In spite of the reminders, I don’t have them with love. Ok, they are apples and I have one every day to keep the doctor away or something! So when I get to make tasty desserts with apples, I am all very excited.
When the husband was away at his work I thought of surprising him with a Kheer (that being his favorite) and while I was at it, thought of making a recipe video. The time to set up the tripod and to get the correct angle (almost!) and to finally shoot while I was cooking – it was quite a task even for a simple recipe as this. As I had nothing else to do, I ended up editing the video all the while forgetting to cook lunch. Hah! 😀 I am learning a lot making these recipe videos and my mom told me how easy it is for her to check out the video than to read the blog. To make Apple Kheer | Apple Payasam
MEASUREMENT
1 cup = 250ml, 1 tablespoon = 15ml, 1 teaspoon = 5ml
Ingredients
- 1.5 cups Apples Grated
- 2 cups Milk
- ⅓ cup Sugar
- 1-2 Green Cardamoms
- 2 teaspoon Ghee
- 2 teaspoon Condensed Milk
- 3-4 Almonds
- 3-4 Pistachios
- A Few Saffron Strands
Instructions
- Peel off the apple skin, remove the core and grate the apple finely. Do this just before beginning the cooking process as apples can oxidize and change color.
- Soak some saffron strands in 2 tablespoon of warm milk. Set aside.
- In a pan, heat 1 teaspoon of ghee and roast the almonds & pistachios until golden brown. Remove onto a plate. In the same pan, heat 1 teaspoon of ghee and add grated apples. Stir fry on a low flame until the apples are mushy.
- Add sugar and continue to stir fry until the mixture comes together. On a low flame. Add one cup of milk and mix well. Cook the apples in the milk until soft and tender. Add crushed green cardamom and mix well.
- Add 1 more cup of milk and mix well. Add 2 teaspoon of condensed milk and mix well. On low heat, boil for couple more mins. Add saffron milk and fried almonds and pistachios. Remove from heat.
- Serve chilled or warm!

- Don’t chop or grate the apples until you are going to make the kheer to avoid discoloration.
- Cook on low or medium heat until you add milk but after adding milk, only cook on low heat.
- Condensed milk is optional but if not adding, adjust sugar quantity accordingly.
- With the apples are sour, the milk can curdle. So, use sweet tasting apples.
- This kheer/payasam thickens up slightly after cooking down. Add extra milk and cook for a couple of mins if serving warm.
