    When a saw a good juicy pineapple while grocery shopping, I couldn’t resist myself and picked it up. I love the tangy sweet taste of the pineapple, I love its sweet smell and I love how it looks even 🙂 So as soon as I was home, I had to click a picture of that big juicy pineapple before cooking with it.

    I had a few options to go with the pineapple and yet, I decided to make a simple pineapple tikka. Usually a tikka is flavored with a number of spices, marinated for a few hours and then roasted/grilled in an oven or tandoor. As I was dealing with pineapple, I used just one spice – red chilli powder. This wouldn’t have been a recipe, if not for the amazing results.

    I served up the Pineapple Tikka with Pudina/Mint Chutney and did I say that it tasted amazing? Oh yes, it did. I didn’t even add any salt to the Pineapple Marinade as the tanginess of the fruit worked out really well. If you are up for the game, you can add in some ginger garlic paste, cumin and/or coriander powder, a pinch of salt and some chaat masala. But let me assure you that it works best as it is too!

    MEASUREMENT

    1 cup = 250ml, 1 tablespoon = 15ml, 1 teaspoon = 5ml

    Ingredients
      

    • 1 cup Pineapple Chunks
    • ½ teaspoon Red Chilli Powder
    • 1 teaspoon Oil
    • ½ teaspoon Chaat Masala
    • Salt as needed
    Prevent your screen from going dark

    Instructions
     

    • In a bowl add cut pineapple pieces, red chilli powder and oil. Mix everything well together and set it aside for 20 mins at the least.
    • Meanwhile preheat the oven at 180°C for 10-15 mins.
    • Arrange the pineapple pieces on a skewer, preferable 5 pieces per skewer. Either set the skewers arranged on the automatic rotisserie or place them on a baking dish and rotate them every few mins so that are evenly grilled and roasted. After 15-20 mins, as pineapple pieces look golden and charred at places, remove them from the oven.
    • Serve hot with Mint Chutney!

    • Be cautious if you are adding salt. As the pineapple cooks, it becomes much more tangier and with additional salt, it might be too much.
