    Egg Bhurji Sandwich | Easy Scrambled Egg Sandwich

    Easy Egg Bhurji Sandwich Recipe

    After sharing a couple of homemade condiments – tomato ketchup & eggless mayonnaise, I am sharing an easy sandwich recipe today. Egg Bhurji Sandwich, made on stove top on a cast iron pan without using a griller/sandwich maker is the most delicious but also simplest sandwich recipe. I usually make this using my Sourdough Sandwich Bread, for a quick dinner and use the mayonnaise as a spread inside the bread. This is one meal that is totally made from scratch at home, including the bread, spreads and fillings that it really is wholesome.

    Sandwich with Egg Bhurji Filling

    Egg Bhurji Sandwich has Indian style scrambled eggs, also known as Anda Bhurji. Unlike the western recipes for scrambled eggs, this recipe has masala made with onions and tomatoes. It is spicy, hot and ever so slightly tangy & sweet from the caramelized onions and tomatoes. There are also standard Indian spice powders used in making the masala and the filling turns out really yumm. As it is, this Egg Bhurji can be served as a side dish for rotis or rice.

    One Sandwich – Many Ways

    Long long ago, the sister and I used to look at pretty sandwich makers that we had no way to access. Life is kinder and better now, I own a few types of sandwich makers. For this Egg Bhurji Sandwich, it could be made in a traditional sandwich maker or grill iron. These days I prefer making my sandwiches in my cast iron pan. To press it down, I use my potato masher and it works perfectly. You could also make this in a grill pan (cast iron preferably) on stove top.

    Egg Bhurji Sadnwich Ingredients

    Here are the main ingredients used in making Indian Style Scrambled Egg Sandwich.

    Bread – Ever since I started baking bread at home a few years ago, we use homemade bread. Between Sourdough Sandwich Bread to regular White Sandwich Bread to Brown Bread, everything or anything works.

    To make Egg Bhurji, we will use Eggs, Onions and Tomatoes. To spice it, we will use Red Chilli Powder, Garam Masala Powder. Fresh Coriander Leaves add a great flavor to the Bhurji. The only whole spice we will use in this recipe is Cumin Seeds, crackled in Cooking Oil.

    Mayonnaise – I used my Eggless Mayonnaise to spread inside the bread before filling it with the scrambled eggs. You could add grated cheese too.

    Tomato Ketchup – I always serve my sandwich with a side of homemade tomato ketchup, with a bowl of bhurji on the side.

    Easy Egg Bhurji Sandwich Recipe

    Variations

    If you don’t like eggs, this Bhurji can be made with the other ingredients. Some of the options include –

    • Replace eggs with grated paneer/cottage cheese to make Paneer Bhurji Sandwich.
    • You could add soft boiled potatoes to the onion tomato masala to make Aloo Sandwich.
    • Finely chopped mushrooms can be added in the place of eggs to make Mushroom Sandwich.
    • And also, this sandwich can be made with just the onion tomato masala and some grated cheese.

    Serving Suggestions

    I usually serve my Egg Bhurji Sandwich with a side of homemade tomato ketchup and if I fancy, with some homemade potato chips or fries. This sandwich tastes the best when made fresh and served hot. Once cooled down, it could become soft.

    Egg Bhurji Sandwich

    Egg Bhurji Sandwich Recipe with Step by Step Pictures

    To make Egg Bhurji -

    In a pan, heat ½ tablespoon oil. Add ½ teaspoon cumin seeds and let them splutter. Add 1 large onion finely chopped and fry until translucent.

    Add ½ teaspoon ginger garlic paste and fry for 1 or 2 mins until the raw smell is gone.

    Next add in 2 medium tomatoes finely chopped.

    Add ¼ teaspoon turmeric powder, ½ tablespoon Kashmiri red chilli powder, ½ teaspoon garam masala powder and salt needed, cook tomatoes till mushy.

    As the oil starts to leave from the sides, make a well at the center of the pan and add remaining ½ tablespoon oil.

    Break open 3 eggs and add them to the center of the pan.

    As they begin to cook, gently scramble them.

    Continue cooking on low flame until the eggs are cooked.

    Remove from heat and add 2-3 tablespoon finely chopped coriander leaves.

    To make Sandwich –

    Grease 4 sandwich bread slices with oil/butter.

    On the ungreased side for 2 bread slices, add 1 teaspoon eggless mayonnaise and spread it evenly.

    Now add 2-3 tablespoon of prepared egg bhurji masala.

    Cover the bread slices with the other 2 slices with greased side on top.

    Meanwhile heat a cast iron pan on low flame. Place one prepared sandwich carefully on the pan.

    Cook on low flame and press it on top using a heavy ladle or potato masher.

    Flip it to the other side and cook until both the sides are crispy & golden. Repeat this with the rest of the bread slices too.

    Serve hot with a side of tomato ketchup.

    • Don’t cook the eggs for long after scrambling to keep it soft.
    • Adjust spices as per preference.
    • The sandwiches can be made in sandwich maker/grill pan too.

    MEASUREMENT

    1 cup = 250ml, 1 tablespoon = 15ml, 1 teaspoon = 5ml

    Ingredients
      

    For Egg Bhurji

    • 3 Eggs
    • 1 Large Onion Finely Chopped
    • 2 Medium Tomatoes Finely Chopped
    • 1 tablespoon Oil
    • ½ teaspoon Cumin Seeds
    • ½ teaspoon Ginger Garlic Paste
    • ½ tablespoon Kashmiri Red Chilli Powder
    • ¼ teaspoon Turmeric Powder
    • ½ teaspoon Garam Masala Powder
    • 2-3 tablespoon Fresh Coriander Leaves Finely Chopped
    • Salt as needed

    • 8 Bread Slices
    • 4 teaspoon Eggless Mayonnaise recipe in notes
    • Oil/Butter as needed
