I love how simple this is. I was able to have all my spices on 1 small plate; mustard seeds in a ramekin. I happened to have a pack of sambar mix to accompany idli and it rarely gets used. It is a few years old not ideal but still packs a punch.
I made 1 egg to try this out and it was a really tasty coating. Inside the egg there was no flavour so maybe I will half or slice the egg to fry in the masala next time.

It was so delicious, and probably the only way I’m going to eat my eggs again. My only concern was that the spices turned too dark in the oil so I didn’t allow the egg to cook in it for long enough because I was afraid it would burn. Still, extremely delicious ?
