IMG_4232I have been bitten my this soup bug recently that I had been trying a variety of soups for the past week. While at parents, I treated them to sweet corn soup, cream of carrot soup, cream of vegetable soup and such like last week and guess what - my soup saga continues. I have always loved having a hot cup of soup at the end of a tiring day. Knorr soups were a boon to me, that I could prepare my favorite soup in less than 10mins flat. Little did I know that preparing soup from the scratch as also as easy as that and healthy too! Though I used to make home made soups, they were few and far. I guess I will continue to explore variety of soups, afterall who wouldnt like some variety? Without further delay, giving my recipe for French Onion Soup.

    Recipe:

    Ingredients:

    • Onion Large - 1
    • Ground mustard seeds - 1 tsp
    • Margarine - ½ tsp
    • Olive oil - ½ tsp
    • Salt - to taste
    • Water - 2-3 cups
    • Brown bread - 1 slice
    • Grated Cheese - 2tbsp (I used Britannia Classic)

    Procedure:

    1. Dice onion into fine pieces, heat a thick bottomed vessel with the margarine and olive oil. Once the oil+margarine mixture is hot enough, put the diced onions.
    2. Reduce the flame and keep frying the onions till they turn nice golden brown. This caramelization of onions is very essential for the soup to taste good.
    3. Add grown mustard powder and give it a quick stir.
    4. Add water and let it boil. Add required amount of salt.
    5. The color of the water turns brown owing to the caramelization of onions.
    6. Add ½tsp of grated cheese, let it melt.
    7. Toast the bread slice with little butter (I didnt use any). Cut it into four pieces.
    8. Pour the soup into a ceramic bowl, place a piece of bread on the top, sprinkle the cheese over the bread.
    9. You can leave the soup in a hot oven for about 2 mins until the cheese melts. I didnt do this step, as I was restless to taste it and my cheese had already started melting.

Note: One can add thin diced garlic as well, but I have skipped it as I didnt want to ruin the flavor of onions.
